Our farm-to-table philosophy

We are committed to sourcing only the freshest, Farm-grown ingredients. Our dishes reflect the seasons and the bounty of Kissimmee, Florida. Taste the difference that comes from true farm-to-table dining.

Every night the menu is written at 4 p.m. based on whatever I just pulled from the lake or cut from the dirt ten feet away. No two nights are ever the same. Here’s what a night feels like:

 

  • First bite – Something bright and raw Microgreen salad with edible flowers, herbs I snipped at noon, citrus from the trees you walked past, finished tableside with hot chili oil or smoked fish salt.
  • From the water – The fish course Blackened tilapia or bass netted that morning, chimichurri rice, red-bell coulis, or whatever the lake gave me today.
  • From the pen – The gator course Cajun-spiced gator loin smoked over citrus wood, collards braised in yesterday’s bacon fat, charred corn purée, lemon-butter pan sauce made from the same trees overhead.
  • From the soil — Dessert straight out of the dirt Carrot cake with carrots pulled at 3 p.m., goat-cheese icing, candied pecans from the trees overhead, blackstrap rum caramel, lake-salt finish.

 

Beverage pairings +$35 (local beer, natural wine, house-made ferments).

You eat on the dock while the next night’s dinner swims under your chair. This isn’t farm-to-table. This is yard-to-plate, lake-to-fork, gator-to-grin.
